Chef Biography

At six feet, eight inches, Tim Keating is probably the tallest chef Great Chefs has ever filmed.  New Jersey born, Tim began his culinary career in his early teens, mastering his craft at major hotels across the country.  Starting in 1984 in California, working under European chefs at Le Meridien in Newport Beach and the Ritz-Carlton in Laguna Niguel, to the Ritz-Carlton, the Omni and the Four Seasons in Houston, Texas in 2005.

Great Chefs caught up with our basketball chef (he played two years at William Patterson College in New Jersey) at the Omni Houston in 1994 to prepare three dishes for our Great Chefs – Great Cities series for the Discovery Channel.  Some might say he has brought cuisine to new heights?

In 2006 he was the executive chef overseeing Food and Beverage operations at the Biltmore Hotel and in 2007, moved east to become the Chef de Cuisine at the Flying Fish Café at Disney World’s Boardwalk Resort.  Today, in 2016, he says it’s just like the Jersey shore with the Flying Fish Café named after a roller coaster ride in the old Atlantic City, New Jersey boardwalk.
