Chef Biography
Born in 1967 in France, Patrick Lassaque, like so many European chefs, started young. He earned his culinary diploma in Marseille, France at the Lycée Hôtelier in 1985 and then apprenticed at the Pastry Boutique in Marseille before moving on in 1990 to St. Tropez, St. Barts, London, Paris and the Hotel Negresco in Nice.
In 1994 he spent over a year with Great Chef Alain Ducasse as pastry assistant at the Hotel de Paris in Monaco before joining Great Chef Marc Ehrler as pastry chef at the Ritz-Carlton in Cancun, Mexico. That is where in 1998, Great Chefs Television caught up with him to tape several pastries for their Great Chefs of the Caribbean series for the Discovery Channel.
He stayed with Ritz-Carlton group, moving around to their various properties until joining the Wynn Hotel in 2010 as executive pastry chef and in 2015, joined Steve Wynn’s old property, the Bellagio, as executive pastry chef, where he remains in 2016.
