Creamy Cole Slaw
Cole slaw plays an important role in barbecue, whether served on the side or heaped on pork barbecue right in the bun. This creamy slaw, flecked with bright carrots, carries the added punch of cayenne.
Ingredients
- Cabbage - 1 small head, cored and finely shredded
- Carrots - 2, peeled and grated
- Onion - 1/2 small, finely chopped
- Apple cider vinegar - 1 to 2 teaspoons
- Sugar - 1/4 cup, or to taste
- Cayenne Pepper - 1 teaspoon
- Mayonnaise - 1 cup, preferably homemade
- Yellow Mustard - 2 tablespoons
- Salt and freshly ground pepper to taste
Instructions
Toss the cabbage, carrots, and onion with the vinegar, sugar, and cayenne. Add the mayonnaise and mustard. Adjust the consistency with additional mayonnaise if desired. Season to taste with salt and pepper. Cover and chill before serving
