Chef Biography
Cory Mattson was born in New Jersey and graduated from the CIA in 1986. While at the CIA, he apprenticed at the Hyatt Regency in New Orleans in 1984, and then the Sheraton University Center in Durham, North Carolina in 1985, where he fell in love with North Carolina.
Following graduation, he joined The Fearrington House in Pittsboro, North Carolina and probably did not realize that his work would continue there for over two decades. The Fearrington House thrived under Mattson, winning award after award. In 1996, the Great Chefs television crew taped him at The Fearrington House for the Discovery Channel’s Great Chefs of the South series.
In 2013 he left to become the executive chef of the exclusive retirement community, Carolina Meadows, and the year after he was chef for the Washington Duke Inn & Golf Club in Durham, as well as corporate chef for LM Restaurants and their 13 properties in Raleigh. In 2016 he joined the Pine Needles Lodge & Golf Club as executive chef.
