Chef Biography

Born in 1971 in Cambrai, France, Sébastien Dégardin graduated with honors in 1991 with a BEP and BAC while simultaneously working in Honfleur as a kitchen clerk at the Buccaneer (1988), and at Restaurant L’Escale in 1989 where he was elevated to second chef by 1991. For the next two years, Chef Dégardin studied under Chef Patrice Laage at Pyramide Fernand Point in Vienna. In 1993-1994, he went on to be head of desserts for Pastry Keup, and then moved to Saint Tropez at the Restaurant Pines, and later that year to Restaurant Fridrici in Luxembourg.

In 1996, at the age of 25, he became the youngest pastry chef of any three-star restaurant, by joining the House of Troisgros in Roanne.  In 1998, the Great Chefs Television team showed up to tape Chef Dégardin for the Great Chefs of the World series for the Discovery Channel.  (Chef Dégardin appears in episodes 195 and 206.)

In 2004, he left the Troisgros family to join Pierre Gagnaire in Paris, Hong Kong, Dubai and Tokyo.  In 2006, Chef Sébastien and his wife, Sandrine, opened The Muscadette Bakery for six years, and in 2013, moved over to open Pâtisserie du Panthéon in Paris, where he remains today.
