Chef Biography

Andrew Niedenthal received his culinary degree in 1988 from Baltimore’s International Culinary Arts Institute while working as a line cook at P.J. Crickets in Baltimore, Maryland.

He did his apprenticeship from 1988-1990 at Dante’s, Admiral’s Cup and the Admiral Fell Inn, all in Baltimore.  He then moved to the Cheeca Lodge in Islamorada, Florida as executive sous chef under Great Chef Dawn Sieber. In 1999, the Great Chefs television crew showed up to tape Chef Niedenthal preparing a Crème Brûlée Sandwich for the Discovery Channel’s Great Chefs – Great Cities series (episode # 53).  In 2001, Chef Andy became the executive chef at Cheeca Lodge, through 2005.

In 2005, he moved to the British Virgin Islands to become the executive chef of the Peter Island Resort for two years, then on to Vieques, Puerto Rico to the Martineau Bay Resort, then back to Islamorada to become the general manager and executive chef for the Green Turtle Inn.  In 2010, he returned to the BVI to be the Culinary Director of Scrub Island Resort, and then returned to Islamorada in 2012 to be the executive chef of the Islander Resort where he is today in 2016.
