Chef Biography
After his formal education and six years in the U.S. Navy running mess halls, Kilian Weigand entered the Culinary Institute, graduating in 1976. He apprenticed at the Copley Plaza Hotel in Boston until 1979 when he started Delice Pastries, which he called “the ultimate education”. In 1980 he was the assistant pastry chef at the Bostonian Hotel working his way up the kitchen ladder to executive pastry chef.
In 1989, he moved over to the Charles Hotel for one year before joining Great Chef Lydia Shire at Boston’s Biba in 1991. On February 4th, 1993, the Great Chefs television crew showed up at Biba to tape Chef Weigand for Discovery Channel’s new television series, Great Chefs of the East, where he appeared in episode #25.
After Biba closed, Chef Weigand moved to Winthrop, Massachusetts as pastry chef at the Excelsior Restaurant, and when that closed, he retired.
