Chef Biography

Mikkel Maarbjerg was born in 1973 in Copenhagen and trained at the Hotel og Restaurantskolen Kobenhavn from 1989-1991.  In 1992 he staged at Perbillini in Italy and in 1993, apprenticed at Restaurant Store Kro.  He served a year in the Danish Navy in 1994, and upon discharge in 1995, he joined Restaurant Kommandanten in Copenhagen as sous chef.

In 1999 he was promoted to executive chef of Kommandanten, and in May 2001, the Great Chefs television team showed up to tape him for their Great Chefs of the World television series for the Discovery Channel.

In 2002 he left to open his own restaurant, Copenhagen’s Restaurant Ensemble, and in 2006, opened a distributorship for Sub-Zero refrigerators and Wolf stoves in Denmark and still consults and is co-owner of Endeavour in Denmark.
