Except in this case that often means right into the pits, and even right into the woodpile, because the type of wood and the control of the fire are two of the great secrets to incredible barbecue.

“Barbecue” shouldn’t be confused with mere “grilling,” although the word gets thrown around a lot when people talk about cooking outdoors. Real barbecue usually means meat, pork or beef, shoulder or ribs‚ slow-cooked with or without a sauce or “rub.” The result is extraordinarily tender and flavorful, served sliced, “pulled” (torn apart), on a bun or just ready to eat with the fingers.

The accompanying recipe booklet gives some recipes for such things as rubs and sauces, but also gives recipes for the accompaniments, things like Lemon Ice Box Pie, Hot German Potato Salad, and Onion Rings. It also goes further afield to such grilled delights as Cajun Pork Roast, Chinese Chicken Wings, Grilled Vegetarian Delight, and Seafood Kabobs.
