Apple and Goose Liver Sandwich
With only three ingredients and the mundane salt and pepper, Kalman Kalla manages to create a delicious and unusual dish: the center slice of an apple is replaced with a crisp slice of seared goose liver. The apple center slice reappears as a garnish. Simple, simple, simple -- and richly wonderful.
Ingredients
- Red apples - 4
- Unsalted Butter - 1/4 cup plus 1 tablespoon
- Goose Liver - four, 1/2-inch-thick slices
- Salt and freshly ground white pepper
Instructions
Cut the apples horizontally into three slices, a bottom, middle, and top. Trim the bottom so that it sits securely. Remove the skin and seeds from the middle slice.
Preheat the oven to 350 F. Melt the 1/4 cup of the butter in a large oven-proof saute pan or skillet over medium heat. Add the apples, cut-side-down for the bottoms and tops. Saute two minutes. Turn the center slices and continue to saute for 2 more minutes. Place the apples in the oven and cook for 6 to 8 minutes, until tender but not mushy.
Preheat the oven to 350 F. Trim the liver slices to roughly the size of the apple center slices. In medium oven-proof saute pan or skillet over medium-high heat, heat the remaining tablespoon of butter. Season the goose liver slices with salt and pepper. Sear the liver for 30 to 45 seconds per side, then put into the oven for 2 minutes to finish cooking through.
To serve: Place an apple base in the center of each plate. Top with a slice of goose liver. Place the apple tops on the liver. Place the sauteed apple center slice to one side of the apple-goose liver sandwich.
