Chimayo Cocktail
The small red Chimayo apples grown within sight of Rancho de Chimayo restaurant form the basis for this drink, which is a great switch from a margarita — and just as lethal. This is a terrific punch for a bunch or party, but do increase the percentage of cider to maintain sobriety.
Ingredients
- Ice cubes
- Gold Tequila - 5 ounces
- Crème de Cassis - 1 tablespoon
- Apple Cider - 1/2 cup
- Freshly squeezed lemon juice - 2 tablespoons
- Apple Wedges - 4, dipped in lemon juice, for garnish
Instructions
Fill a cocktail shaker or quart jar with the ice cubes. Add the tequila, crème de cassis, cider, and lemon juice. Shake well and strain into four glasses. Add the ice cubes and garnish the rim of each glass with an apple wedge.
