Fried Catfish
Note: Bozo’s prepares fried food to order, and there are no fixed quantities for ingredients. Consider this “directions,” not a “recipe:” decide how many filets you would like, and adjust other quantities to fit

Soak catfish fillets in ice water for 30 minutes. Drain. Season with salt only and cover with a light coating of cornmeal. Cook immediately in hot vegetable oil; do not allow to sit. Cook the fillets 1 minute, turn, and cook an additional 45 seconds. Turn one more time briefly for 30 seconds, or until golden brown. Drain on a pad of newspaper covered with paper towels.
