Avocado Gazpacho
So simple, so fresh, so good: this soup is prepared in a minute by pulsing the ingredients together, then chilled before serving. Toasted focaccia is the perfect accompaniment.
Ingredients
- Avocado Gazpacho
- Avacado - 1
- Onion - 1⁄4, diced
- Cucumber - 1⁄2, peeled
- Clove Garlic - 1/3
- Red Wine Vinegar - 1 t
- Water - 11⁄2 cup
- Salt to taste
- Olive Oil - 1⁄2 t
- Shrimp - two
Instructions
In a blender, combine and blend until smooth. Add more or less water to desired consistency. Garnish Gazpacho with one shrimp and microgreens.
