Ham with Horseradish
Ingredients
- Ham - 12-15 kilo
- Horseradish
- Garnish
- Lettuce
- Salt and Pepper - to taste
- Herb Vingar - to taste
- Canola Oil
Instructions
Ham is boiled. The ham for this dish weighs from 12 to 15 kilo, boiled 1 hour per kilo. The ham comes from a supplier that the chef has worked with for 40 years, and is a very special ham. It is marinated in a special marinade which is what gives it its taste. The restaurant sells at least four of the huge hams a day.
The ham is very finely sliced, the slices should not be too thick.
Use lettuce (salted and peppered and a touch of herb vinegar and canola oil) to garnish. Toss the lettuce and put on plate, garnish with radish tomato and a freshly ground horseradish. The horseradish is the most important thing to serve with ham in Austria.
To make a nice garnish, skin the tomato and roll into a rose. Cut cross-sections into the radish, and you get a good looking garnish.
The ham comes from Upper Austria, and they are organically grown.
