Roasted Pears
Caramelized pear slices served warm with an accompaniment of pistachio ice cream make a wonderful French dessert.
Ingredients
- William’s pears - 5 large, mature
- Granulated Sugar - 1/2 cup
- Unsalted Butter - 2/3 cup
- Juice from one lemon
- Water - 2 tablespoons
- Pistachio Ice Cream
Instructions
To prepare the pears: Peel and core pears; cut each one into 6 to 8 pieces. One hour prior to cooking, sprinkle sugar over pears and let set.
In a large saucepan over medium high heat, melt butter. Place pears into melted butter and saute 3 to 4 minutes; turn pears and saute an additional 2 to 3 minutes or until pears are lightly browned and fork-tender, taking care not to burn. As the pears begin to caramelize, add small amounts of lemon juice and water to the saucepan to deglaze, reducing the liquid each time. Remove from heat and serve immediately.
To serve: Place pears on serving plates and spoon sauce over the top. Place a scoop of pistachio ice cream on the side.
