Veggie Burger
Ingredients
- Zucchini - 2 large
- Yellow Squash - 3
- Carrot - 3, large peeled
- Vidalia Onions - 2 large
- Red Onions - 2 large
- Button mushrooms - 2 lbs
- Firm Tofu - 2 lbs
- Black Beans - 2 (8 ounce) cans
- Panko bread crumbs - 2 cups
- Kosher salt & pepper - 1 teaspoon
- Garlic - 1 tablespoon, granulated
- Lawry’s season salt - 1 teaspoon
- Old Bay seasoning - 1 teaspoon
- Olive Oil - 2-3 tablespoon
Instructions
Directions:
Grate zucchinis, squash, carrots, onions, mushrooms, tofu and black beans in a food processor
Drain and squeeze out all juices, then mix in:
Panko bread crumbs
kosher salt & pepper
granulated garlic
Lawry’s season salt
Old Bay seasoning
Squeeze out all juice again, form into patties. Heat a sauté pan on medium high heat, add olive oil, when oil is hot add patties and fry approximately 5-8 minutes on each side.
** to squeeze out vegetable juices use a fine colander or cheesecloth
