Wild Mushrooms Flavored with Pine Needles
A wonderfully earthy appetizer, this simple dish combines mushrooms, soy sauce, saki, and pine needles. Harvest fresh clean needles; they provide an aromatic touch to the dish.
Ingredients
- Wild Mushrooms - 4 large
- Dashi - 1 tablespoon, dried
- Soy Sauce - 1 teaspoon
- Sweet Saki (Mirin) - 2 teaspoons
- Saki - 1 teaspoon
- Pine needles
Instructions
Preheat the oven to 400 F. Gently clean the mushrooms with a cloth. Combine the dashi, soy sauce, and saki to form a marinade. Brush the mushrooms with the marinade until soaked. Put a layer of pine needles in an ovenproof pan. Set the mushrooms on the pine needles. Pour some of the marinade on top of the mushrooms. Bake 4 to 5 minutes, turning once.
To serve: Cut the mushrooms in half and present simply on small serving plates, accenting with a few fresh pine needles.
