Bruce and Susan Molzan were restaurant management graduates from James Madison University in Virginia.  Bruce went on to the Culinary Institute and Susan managed the food service at Neiman-Marcus in Dallas.  Chef Bruce later took a position at the Houston Hyatt and the Warwick Post Oak before becoming part owners of Ruggles Grill in Houston.  In 1987 they emerged as sole proprietors.

In 1994, Great Chefs showed up at Ruggles to tape several dishes of Chef Bruce for their Great Chefs – Great Cities series.
