Chef Biography

Daphne Macias was born in 1966.  At age 14, she began working as a cook and tended bar at an Italian restaurant and bar in New England, four years before deciding to enter the Culinary Institute, graduating in 1987.  Following graduation, she worked as a night line cook at the Doral Spa in Miami, and then a line cook at the Silverado Café in Davie, Florida.

In 1991, she moved to New Orleans and joined the Pelican Club on Exchange Alley in the French Quarter as pastry chef.  In May of 1992, the Great Chefs team showed up to tape Chef Macias for the Discovery Channel’s Great Chefs – the Louisiana New Garde television series(episode #1).

Chef Daphne returned to Florida and now, in 2016, she works as Food Service Manager for the Palm Beach County School District in Loxahatchee, Florida, but her deserts continue to adorn the Pelican Club’s menu.
