Chef Biography

David Machado had dreams of something larger than just being a chef.  After finishing up in 1975 at the University of Massachusetts, he traveled out to San Francisco’s City College for some advance education, and then enrolled in the California Culinary Academy in 1985.

In 1991, he was the General Manager and Executive Chef of Pazzo Ristorante in Portland, Oregon which was owned by Bill Kimpton and his group.  The Great Chefs television crew arrived in 1994 to tape Chef Machado for their television series Great Chefs – Great Cities, to be aired later on the Discovery Channel.

He became the Head of Chef Operations for the Kimpton Group in 1996, developing restaurant concepts for their hotels.  A year later, he was offered the position as Vice President of Restaurants with the Heathman Restaurant Group, a position he held until 2003 when he launched his own restaurant, Lauro Mediterranean Kitchen, followed by Vindalho in 2005.  In 2012, he closed both restaurants, and formed David Machado Restaurant Group.  The first property of DMRG was Artisian Bakery in the Eastlund Hotel, along with Altabira City Tavern, and in 2015 he has added Citizen Baker, also in Portland.
