Chef Biography

Louis Aaron was born in Idaho, and raised in Alabama.  After graduating from school in 1980, Louis went to work in various Boise restaurants before being asked to consult for the Schreiner family of cattlemen fame, who were building a hotel on their Y O Ranch in Kerrville, Texas.  Chef Aaron was so intrigued with the wild game mix of food from the ranch, that he decided to stay, as Hilton Hotels took over management of the hotel.

Great Chefs caught up with Chef Aaron at Sam Houston’s Restaurant in the Y O Hilton Hotel to film several dishes for their Great Chefs of the West series.  Chef Louis stayed until 1988 when he became regional corporate chef for International Ram, a service industry provider.

In 1994, Chef Aaron moved to Boise to open Chef Lou’s Restaurant and the Westside Drive-In, the only drive-in with a chef.  He also started RILA Business Concepts and was singled out twice as Idaho’s Small Business Champion of the Year with his 38 employees.
