Barbecued Shrimp
Barbecued shrimp is a New Orleans favorite. The “barbecue” part is a slight misnomer, as these shrimp are cooked — boiled or oven roasted — in a buttery sauce.
Ingredients
- Creole Seasoning
- Dried oregano
- Dried rosemary
- Crumbled bay leaf
- Garlic powder
- Freshly ground black pepper
- Salt
- 1/2 teaspoon MSG (optional)
- Olive oil
- Butter
- Dry white wine for cooking
- Whole shrimp (preferably with the heads on)
Instructions
Mix the spices together in approximately equal amounts, adjusting slightly to suit your own taste.
Bring the olive oil and butter to a boil in a saucepan. Add the wine and bring to a boil again. Season the shrimp liberally with the seasoning, tossing well. Add the shrimp to the boiling liquid and bring back to a boil. Cook for 4 to 5 minutes, depending on the size of the shrimp. Turn the heat off and allow the shrimp to sit in the liquid for 20 minutes. Serve the shrimp in a bowl with the sauce poured on top, making sure to scrape all the liquid from the pan to get the shrimp essence on the bottom.
