Fried Oyster Loaf (Oyster Po’ Boy)
Note: Bozo’s prepares fried food to order, and there are no fixed quantities for ingredients. Consider this “directions,” not a “recipe:” decide how many filets you would like, and adjust other quantities to fit
Ingredients
- Oysters (preferably, freshly shucked) - approximately 12 per loaf
- Cornmeal
- Vegetable oil for deep frying
- Salt and freshly ground pepper for seasoning
- French bread or similar loaf of crusty bread
- Melted butter
Instructions
Soak the oysters in ice water for 30 minutes. Drain in a colander. Roll lightly in cornmeal. Deep-fry in hot vegetable oil at 350 F for less than 2 minutes, or until golden brown. After the oysters are done, season with salt and pepper to taste. Slice the bread in half lengthwise, coat with butter, and arrange the oysters on the bread. Replace the top.
Shredded lettuce, tomatoes, and pickles may also be added, in which case the sandwich is referred to as “dressed.”
