Vinegar Pie
Ingredients
- Dough
- Cold Butter - 1/2 cup
- Sugar - 1/4 cup
- Egg - 1
- Flour - 1 1/2 cups
- Salt - 1/4 teaspoon
- Filling
- Eggs - 4
- Sugar - 1 1/2 cup
- Cornstarch - 4 tablespoons
- Salt - 1/2 teaspoon
- Vinegar - 4 tablespoons
- Lemon Juice - 1 lemon, juiced
- Water - 1 1/2 cups
- Butter - 1 tablespoon
Instructions
Pie
cream butter and sugar until well combined. mix in egg. add flour and salt. Mix until just combined. Roll to 1/3 inch thickness, place in tart pan and set in the refridgerator for at least one hour. After cool, bake in a 350 degree oven until golden brown, about 20 minutes.
Filling
Whisk eggs with sugar and cornstarch. Add salt, vinegar, water and lemon juice. Put on stove and whisk constantly until filling boils. Add butter and pour into baked tart shell. Put in refrigerator and let cool for at least 4-6 hours. Preferably over night.
