Chef Biography
Frederic Poisson grew up in France, attended pastry school, graduated and began his apprenticeships at various French restaurants. As he rose through the kitchen ranks, he ended up as the executive pastry chef at the Martinez Hotel in Cannes, France under Great Chef Christian Willer.
In September of 1998, the Great Chefs television crew showed up in the kitchen of the La Palme d’Or in the Martinez, to tape Pastry Chef Frederic Poisson for the Discovery Channel’s Great Chefs of the World television series (episode 213).
After the Martinez was taken over by Hyatt and Chef Willer retired, Chef Poisson moved down the street to Restaurant New-York New-York where he remains today in the Fall of 2016.
