Chef Biography

Peggy Hughes was born and raised on the island of Anguilla, and always enjoyed baking. When her brother-in-law, Vernon Hughes, began cooking at the Cinnamon Reef Hotel in 1991, she joined him to prepare the desserts.

Six years later in 1997, the Great Chefs team was at the Cinnamon Reef Hotel taping the winner of the Caribbean Culinary Competition, Vernon Hughes, when he suggested that Peggy Hughes prepare the dessert segment. Since we always have picked chefs for our shows, from other Great Chefs recommendations, we agreed. She prepared an Anguilla Mango Lime Mousse Tart with Coconut ice cream.

In April 2000, they both opened E’s Oven on the island and today in 2016, the restaurant enjoys excellent reviews for its cuisine and value.
