Chef Biography

Robert Krol was born in New Orleans in 1966 and at age 15, was washing dishes in a restaurant in the summer while in high school.  He knew the chef and told him he wanted to be just like him.  The chef responded that he should just keep it up, and if you are good enough, you will make it.  Following school, in 1981 he went to work for La Louisiane in the French Quarter and by 1983, he had worked his way up to saucier. He then moved around the corner to Montalbano’s on Bourbon Street and worked his way up to chef by 1986.

In 1987, he decided to work under a French chef, Great Chef Gerard Crozier in the suburb of Metairie, Louisiana and learn his techniques.  Chef Krol said that Crozier was the toughest and the best, and if you can get past the first three or four years, you can cook anywhere in the United States.  In 1993, the Great Chefs television crew stopped by to tape Chef Krol for the Discovery Channel’s Great Chefs series, the Louisiana New Garde, where he appeared in episodes # 9 & 19.

In the late 1990s, Chef Gerard Crozier sold the restaurant to Chef Krol, who continued to run it until Hurricane Katrina.  He then moved across Lake Pontchartrain to be the executive chef of Beau Chene Country Club.
