Fish is probably not the first thing you think of for a tailgate party. This version will make it plain why fish is a great idea for outdoor appetites. The flaked grilled fillets take their place beside green onions, sour cream, and horseradish, ready for everyone to compose their own combination on toasted bread slices.
- Catfish fillets - six, 7-ounce
- Seafood seasoning - 2 tablespoons
- Green Onions - 1/2 cup, chopped
- Sour Cream - 1/2 cup
- Prepared Horseradish - 1/2 cup
- Toasted Bread Slices - 6
Sprinkle the catfish fillets with the seafood seasoning. Place the fillets in an oiled grill basket. Cook over hot coals for 2 to 3 minutes on each side. Remove the fillets and flake with a fork and knife.
Arrange flaked catfish on a platter with the green onions, sour cream, and horseradish. Serve any combination of the ingredients over the toasted bread slices.
