Grilled Chicken in Sauce
Plan ahead for a tailgate and grill or smoke chicken breasts, let them cool, and cut them into bite-sized pieces. Bring the ingredients for the sauce, warm them together, and let everyone dip chicken pieces in the warm sauce.
- Mayonnaise - 10 tablespoons
- Lemon Juice - 2 tablespoons
- Vinegar - 2 tablespoons
- Sugar - 1 tablespoon
- Freshly ground black pepper - 1-1/2 tablespoons
- Salt - 1 tablespoon
- Grilled or Smoked Chicken Breasts - 4, cut into bite-sized pieces
Mix all of the ingredients for the sauce together. In a small sauce pan or skillet, simmer the sauce for 5 to 10 minutes. Add the chicken pieces and heat for 3 to 4 minutes. Serve warm in a chafing dish; use toothpicks to spear pieces.
